Fried Green Tomato Caprese Stacks

Fried what? If you haven't lived in the south a fried green tomato may sound like crazy talk.  But trust me when I say they are strangely appealing and even down right delicious.  They are more acidic than regular tomatoes, even a little sour which is why it pairs so nicely in this dish with fresh, sweeter tomatoes and mozzarella cheese. So what is a fried green tomato?  It's actually traditionally  a tomato that didn't ripen at the end of the growing season and, instead of wasting it, some ... Continue Reading

Blistered Pepper and Heirloom Tomato Sauce

Summer heirloom tomatoes.  I think that may be all I need to say about this post.  I mean, right?  The colors and flavor of summer. And when it all comes to a screeching end it's so sad. That day when you walk into the grocery store and there is one little overripe heirloom tomato left on the shelf.  Then it's back to those flavorless winter tomatoes that make me want to cry and run from the grocery store.  Oh wait - that may have happened once.  Don't judge. Well I'm getting ahead of it ... Continue Reading

Greek Kebab Skewers

If you can't travel to Greece this year then bring the flavors and aromas of Greece to you. We are all missing travel right now and looking for ways to stay connected to the world around us.  I love watching cooking travel shows on Netflix like 'Feed Phil' and 'Chef's Table' for inspiration and to feel like I've actually been somewhere! When I was a young twenty something I had the chance to go to the Greek Islands and let me tell you it was an experience I'll never forget and, especially now, ... Continue Reading

Caprese Cups with Blackened Shrimp

It's summertime and that means lots and lots of summer tomatoes and classic Caprese salads right?  Well....it used to.  A big ol' platter set out to share with family and friends is a memory from last year.  This year it's all about how do I still socialize and picnic with friends but keep things to an individual portion.  This is my answer to that.  Caprese cups.  They can be made individually by each person and best of all the ingredients can be packed up before assembled and brought to ... Rosemary Skewered Shrimp with Blistered Tomatoes and Brown Butter Vinaigrette

Rosemary Skewered Shrimp with blistered tomatoes and brown butter vinaigrette may be a mouthful to say but every little bit of this sentence will make sense to you when you take your first bite.  I have to admit, I went fancy on you this time.  I've been publishing a lot of easy weeknight meals or 'unfussy' recipes but every once in awhile you need something in your arsenal that takes just a little bit more effort and has that 'wow' factor.  And I think this dish has it.  You will get ... Bacon Caprese Cups

Father's Day is coming up and in honor of all the bacon loving dads out there I wanted to create a menu that includes bacon and/or beer in every dish.  I'm starting out with these Bacon Caprese Cups and we'll see where it goes from there!  Caprese Salad is so delicious and simple.  It celebrates the beauty of a perfectly ripe, sun-kissed tomato with just a few simple ingredients like creamy mozzarella cheese, fresh basil, olive oil and salt.  While this version might make a purist cringe ... Fresh salsa.  Simple but irresistible. This Cinco De Mayo inspired salsa is easy, fresh, and delicious.  Served alongside some guacamole, chips, and a refreshing, ice-cold margarita you have yourself the perfect starter for any Cinco De Mayo celebration.  Store bought salsa is fine but why not blend up a quick batch of your own?  It only takes a few minutes and a couple of ingredients that you may already have on hand.  And if there are any leftovers....not that there will be... I love ... Zucchini Noodle Salad

Recently my sister and I took our kids to Santa Cruz for a fun getaway and cousin time.  Along the way we stopped at a pizza place in Campbell, CA and had this delicious zucchini noodle salad.  It was packed with flavor and different veggies (roasted red peppers, olives, fresh and sundried tomatoes, artichokes) and had this spicy, tangy light dressing to it.  The best part was that my niece, who was all of 1 years old, was shoveling this salad into her mouth by the fistful.  She loved it!  ... Panzanella Salad with Lemon-Basil Dressing

Hold up!  Summer is not over yet.  Is it? Well even if it is this Panzanella Salad with grilled veggies and a beautiful grilled lemon-basil dressing is a hit year round.  It's a hearty salad, more of a side dish than just a salad, and it won't wilt in the summer heat so it's perfect for a picnic or barbeque if you are lucky enough to squeeze one last one in this Labor Day weekend.  Panzanella is a Tuscan inspired 'bread' salad with fresh vegetables where the day-old bread soaks up the ...
