Fresh Mango Honey Cake

This Fresh Mango Honey Cake recipe started for me with a lonely can of sweetened condensed milk leftover in my pantry that I wanted to get rid of.  That, and I bought a six-pack of mangos at Costco and they all ripened at once (as they tend to do).  From those two ingredients this yummy cake developed from concept to fork.  Ha-ha. Okay well....I thought that was funny.  Maybe humor is not best suit.  I'll stick to cooking. Anyway, as I was pondering what might make a nice sweet ... Continue Reading

Sweet and Spicy Chicken

Nothing could be easier than this three ingredient sweet and spicy chicken.  It's honey, Sriracha, and oranges.  I like to use clementines this time of year (in the Mandarin family) but really you can use any kind you can find. The great thing about this recipe is you can feed a crowd or cut it up and put it on skewers as a fancy appetizer.  Either way it's a winner.  The key is to marinade for at least a couple of hours but that's the hardest part about it.  Other than that it's a cinch ... No-Bake Peanut Butter and Honey Oat Bars

Nothing reminds me of home and being a kid more than a peanut butter and honey sandwich.  I LOVED them growing up.  So as part of my segment for KCRA on Dorm Room Dishes I decided to come with an easy, no-bake treat that had the flavors of a peanut butter and honey sandwich AND that could be made in the microwave.  Perfect for a college dorm room,  right? Now I'm not normally a microwave kind of cook unless it's reheating something but I have to say these really turned out delicious!  ... Continue Reading

Sweet and Spicy Grilled Pineapple

These sweet and spicy grilled pineapple skewers may be the easiest recipe I've ever posted.  But easy doesn't mean it's doesn't bring the wow factor with the flavor.  I made a super fast glaze for the pineapple by combining honey, Sriracha sauce, and soy sauce.  That's it!  Brush some one before you grill it, a little more while grilling, and the last little bit after.  The honey gives it that sticky sweetness you want and the Sriracha adds a little heat.  The soy sauce brings the balance ... Fresh Fruit Salad with Lemon-Honey Dressing

This fruit salad is especially scrumptious during berry season but I make all year round and is from my cookbook, The Savory Gourmet. I adjust the amount of honey and lemon I use based on the natural sweetness of the fruit available to me.  So a little more honey in the winter and a little less in the summer.  But what I really love about this dish is how colorful it is and how just those little extra touches of the crème fraiche with the tangy sweetness of the dressing really makes this ... Pork Tenderloin with Dijon Honey-Maple Sauce

My family loves pork tenderloin for dinner.  And it's relatively easy and inexpensive to make so I love it, too.  But what makes it memorable meal versus an okay meal?  In my opinion there are three simple but key steps to making a great dish.  First is really marinating the pork first, for at least a few hours, to let those flavor seep in.  In the marinade below I used a variety of flavors, some of which were used in the sauce as well.  Second, you want to really get a crust on the ...
