Buttermilk Blue Cheese Coleslaw with Jalapeno and Cilantro

Coleslaw, for me, was never that exciting.  Sometimes goopy.   Sometimes bland.  Sometimes downright questionable on how long it's been sitting out  and therefore easily passed over.  I mean is that just me?  I don't think I can ever recall someone saying, "Oh good you brought coleslaw."  But I wanted to change that and give this simple side dish a chance in the limelight. So for this Labor Day, to go alongside my slow cooked ribs, I set out to make a coleslaw that has some real bold ... Continue Reading

Tomato and Red Pepper Feta Spread

Tomato and Red Pepper Feta Spread. Fresh tomatoes! It's the peak of summertime and once those tomatoes start ripening on the vine they just keep coming don't they?  At first you are excited to see those first few ripen on the vine and turn from pale green to a perfectly ripened, sweet, juicy red.  But after a few weeks of non-stop tomatoes you are practically giving them away to anyone who will take them. And even if you aren't growing them in your garden they are in season and on sale in ... Continue Reading

Corn and Sweet Potato Salad

Corn and sweet potatoes are an irresistible combination. Plus it's summertime and you probably have corn coming out of your ears.  Okay....that was a terrible attempt at humor but hopefully this recipe for Corn and Sweet Potato Salad hits a better note with you.   I call it a salad but it's really a side dish or a hash.  There are many names for it but whichever you choose it's delicious and easy to make. Corn is probably on sale by the bucketful where you live as it is here in ... Continue Reading

Kid friendly BBQ Chicken

This kid friendly BBQ chicken is not just for kids but for anyone who loves BBQ sauce but hates spice.  If I try to sneak in even a little bit of spice into my BBQ sauce my kids will call me out on it right away. Guaranteed.  I've tried. So this time I decided to make my own BBQ sauce that has the sweetness and tanginess that makes BBQ so delicious, and the chicken so tender, but eliminate any hint of a kick.  Yep. No chili peppers.  Typically I love to add chipotle peppers in adobo sauce ... Continue Reading

Pulled Pork Tacos with Fried Plantains

Slow roasted pork tacos....tender, juicy and fork tender.  Is there anything better?  Really?  Yes, there is.  These tender pulled pork tacos with perfectly golden brown fried plantains (think not sweet bananas) topped with a crisp carrot and cabbage slaw and a slightly tangy, creamy sheep's milk feta cheese.  I mean...there is a reason this taco is my most requested dish when I entertain.  Seriously just the perfect bite. So here's the lowdown on this awesome taco.  The pork can be ... Continue Reading

Heirloom Carrot and Purple Cabbage Coleslaw

I make this coleslaw year round and use regular carrots when I can't find the heirloom variety.  It's such a light and refreshing side dish that comes together in mere minutes and pairs especially well with my pulled pork tacos with fried plantains!  But really it goes with any picnic or BBQ as an easy crowd pleasing side dish.  Even the kids love coleslaw, right?  The heirloom variety of carrots are nice because they add some additional color to the dish which makes for a vibrant ... Sweet and Spicy Grilled Pineapple

These sweet and spicy grilled pineapple skewers may be the easiest recipe I've ever posted.  But easy doesn't mean it's doesn't bring the wow factor with the flavor.  I made a super fast glaze for the pineapple by combining honey, Sriracha sauce, and soy sauce.  That's it!  Brush some one before you grill it, a little more while grilling, and the last little bit after.  The honey gives it that sticky sweetness you want and the Sriracha adds a little heat.  The soy sauce brings the balance ...
