Summer Fruit Puff Pastry with Mascarpone Whip Cream and Peach Glaze

Oh the sweetness of summer fruit....there is nothing like a fresh picked raspberry.  Or a peach straight from the tree.  Or a buck of cherries that came from the cherry tree in the backyard so perfect with their bright red skin.  This puff pastry dessert is a celebration of all that delicious summer fruit in season.  I used Ranier cherries, fresh raspberries, and fresh peaches but you can use whatever you have on hand that you like.  Blackberries, blueberries, strawberries....you can't go ... Corn and Sweet Potato Salad

Corn and sweet potatoes are an irresistible combination. Plus it's summertime and you probably have corn coming out of your ears.  Okay....that was a terrible attempt at humor but hopefully this recipe for Corn and Sweet Potato Salad hits a better note with you.   I call it a salad but it's really a side dish or a hash.  There are many names for it but whichever you choose it's delicious and easy to make. Corn is probably on sale by the bucketful where you live as it is here in ... Continue Reading

Father’s Day Ice Cream Sundae

The grand finale of my Father's Day menu starring all things bourbon, bacon and beer is this ice cream sundae topped with the brown sugar and bourbon glazed bacon and the whiskey caramel sauce.  I started with just good old French Vanilla ice cream....piled high in the bowl. Then I sprinkled the top with a bit of crumbled bacon and a big old piece on the side for good measure. From there I  added a little bit of pizzelle - which is just an Italian wafer- to the sundae to give it more ... Continue Reading

Brown Sugar and Bourbon Glazed Bacon

Part of my Father's Day menu is this mouth watering and super simple Brown Sugar and Bourbon Glazed Bacon.  It contains all the necessary elements (sweet, salty and little back-of-the-mouth tang from the Bourbon).  And it's the perfect accompaniment for any brunch but particularly a Father's Day brunch that features all things bourbon, bacon and beer.  I bet you know a dad out there who will love this amped up version of bacon!  And if you aren't sure of the bourbon part (or if you want to ... Whiskey Caramel Sauce

Father's Day, or any occasion really (like Tuesday), is just better with a little whiskey caramel sauce to drizzle on top of your ice cream, on top of brownies, over fresh fruit, or to lick right off the spoon.  Not to mention packaged in a glass jar it also makes a great hostess gift or a little bonus Father's Day gift.  I packaged the whiskey sauce with a bottle of beer and a little glass jar of the same whiskey that I used in the sauce.  It's a trio that most any dad would love! ... Beer Braised Sausage Sloppy Joes

Part 2 of my Father's Day menu that includes everything Beer, Bacon or Bourbon are these Beer Braised Sausage Sloppy Joes.  Not the most elegant dish, I know, but flavorful and sure to please Dads everywhere who just want to relax and enjoy a good meal.  And it pairs wells with beer.  Did I mention that? I decided on sweet Italian sausage as the meat because it is readily available and already has some good flavor.  But I amped it up a but by adding in some diced pancetta, fresh ... Continue Reading

Bacon Caprese Cups

Father's Day is coming up and in honor of all the bacon loving dads out there I wanted to create a menu that includes bacon and/or beer in every dish.  I'm starting out with these Bacon Caprese Cups and we'll see where it goes from there!  Caprese Salad is so delicious and simple.  It celebrates the beauty of a perfectly ripe, sun-kissed tomato with just a few simple ingredients like creamy mozzarella cheese, fresh basil, olive oil and salt.  While this version might make a purist cringe ... Cinco De Mayo Salsa

Fresh salsa.  Simple but irresistible. This Cinco De Mayo inspired salsa is easy, fresh, and delicious.  Served alongside some guacamole, chips, and a refreshing, ice-cold margarita you have yourself the perfect starter for any Cinco De Mayo celebration.  Store bought salsa is fine but why not blend up a quick batch of your own?  It only takes a few minutes and a couple of ingredients that you may already have on hand.  And if there are any leftovers....not that there will be... I love ... Pine Nut Crusted Goat Cheese Salad with Cara Cara Orange Vinaigrette

Pine nut crusted goat cheese?  "I don't know...."  Is that what you are thinking?   Admit it.  Well I had my doubts too when I came up with the idea but trust me it just works.  The breadcrumb and toasted pine nut mixture is crunchy and has that distinct pine nut flavor to it that we all love in pesto.  It's just like sprinkling pine nuts on your salad only this time it's right on your cheese.  Paired with a bright, citrus vinaigrette this goat cheese salad makes a terrific starter, ... Challah Bread Egg Toast

This ooey, gooey Challah Bread Egg Toast (loaded with lots of cheese and veggies) is the ultimate breakfast sandwich for any occasion.  It's sumptuous, full of flavor and texture, and makes an impressive presentation on any brunch table.  I love using Challah bread for it's slightly sweet outside and spongy, delicate texture but you could use brioche or even a ciabatta bread if you can't find Challah.  Challah is a Jewish traditional ceremonial bread but it's readily available in most ...
