Egg and Avocado Toast
Egg and Avocado Toast. It doesn’t get any simpler than that. It’s like the perfect little black dress. It can be dressed down and casual for every day events like breakfast at home for one or dressed up with a few accessories for a special occasion like a bridal shower or luncheon for twenty.
So lets talk options. I decided to use hard boiled eggs because they are an easy do ahead step and they slice beautifully. Plus, who wants to stand there and make eggs twenty different ways for different people? Not me. And hard boiled eggs can be served room temp or cold even – bonus points. The avocado is something creamy and fresh that I think goes so well with eggs. But, if that’s not your thing you could choose any topping to go along. Fresh spinach or just a nice slice of tomato. For the basic version I did sliced hard boiled egg, sliced avocado, a sprinkle of salt and pepper and of course hot sauce and then a little chopped basil and a drizzle of some good olive oil. And for me…that was perfection.
Dressed Up Version
Now let’s talk ‘dressed up’. For a fancy brunch or bridal shower I would put out a fun variety of different toppings like sliced tomato, chopped onion, chopped or sliced cornichon pickles, baby arugula, crumbled bacon, smoked salmon and, if you are going really fancy, caviar. This way everyone can dress theirs up the way they like it and it’s interactive and gets people talking.
But back to basics. This morning I happened to have a perfectly ripe avocado that needed to be eaten ‘today’ and two lonely eggs in the fridge along with a half of a loaf of rustic Italian bread leftover from last night’s dinner. And sometimes that’s all it takes to get a little inspiration….
- 4 slices rustic bread
- Drizzle of olive oil
- 2 eggs hard boiled and sliced
- 1/2 large ripe avocado, sliced
- Hot sauce (optional)
- Salt & Pepper
- Fresh chopped basil
- Preheat oven to 325 or use a grill pan on the stove. Drizzle bread with olive oil and cook until golden brown on the edges and still soft in the middle. Approximately 10-12 minutes in the oven and less on a grill pan.
- Top grilled bread with sliced egg, sliced avocado, then season with salt and pepper, hot sauce, fresh basil and drizzle with olive oil.
