Greek Kebab Skewers

If you can't travel to Greece this year then bring the flavors and aromas of Greece to you. We are all missing travel right now and looking for ways to stay connected to the world around us.  I love watching cooking travel shows on Netflix like 'Feed Phil' and 'Chef's Table' for inspiration and to feel like I've actually been somewhere! When I was a young twenty something I had the chance to go to the Greek Islands and let me tell you it was an experience I'll never forget and, especially now, ... Continue Reading

Caprese Cups with Blackened Shrimp

It's summertime and that means lots and lots of summer tomatoes and classic Caprese salads right?  Well....it used to.  A big ol' platter set out to share with family and friends is a memory from last year.  This year it's all about how do I still socialize and picnic with friends but keep things to an individual portion.  This is my answer to that.  Caprese cups.  They can be made individually by each person and best of all the ingredients can be packed up before assembled and brought to ... Rosemary Skewered Shrimp with Blistered Tomatoes and Brown Butter Vinaigrette

Rosemary Skewered Shrimp with blistered tomatoes and brown butter vinaigrette may be a mouthful to say but every little bit of this sentence will make sense to you when you take your first bite.  I have to admit, I went fancy on you this time.  I've been publishing a lot of easy weeknight meals or 'unfussy' recipes but every once in awhile you need something in your arsenal that takes just a little bit more effort and has that 'wow' factor.  And I think this dish has it.  You will get ... Balsamic Rosemary Chicken Skewers and Cipollini Onions

Balsamic Rosemary Chicken Skewers and Cipollini Onions....is there anything better than that?  Balsamic acts as a tenderizer so you get this really tender, flavorful chicken that turns a nice golden brown color on the grill or in the skillet.  My kids actually LOVE this recipe for chicken.  I added the Cipollini onions because they are small and could be easily skewered to make a really cute presentation of chicken and onions.  Same with the lemon slices.  Your guests can remove the lemon ... Sweet and Spicy Chicken

Nothing could be easier than this three ingredient sweet and spicy chicken.  It's honey, Sriracha, and oranges.  I like to use clementines this time of year (in the Mandarin family) but really you can use any kind you can find. The great thing about this recipe is you can feed a crowd or cut it up and put it on skewers as a fancy appetizer.  Either way it's a winner.  The key is to marinade for at least a couple of hours but that's the hardest part about it.  Other than that it's a cinch ... Back To School Party

Why not kick off the school season the way we do the summer with a back to school party to get the kids excited?  It doesn't have to be big.  Just your kids and one or two friends that maybe they haven't seen over the summer or a new friend who may be in your class next year!  The more important thing is to involve your kids and make it fun and easy by serving a few kid-friendly favorites and letting them help.  I grabbed a roll of white wrapping paper and let them make the sign, which ... Kid friendly BBQ Chicken

This kid friendly BBQ chicken is not just for kids but for anyone who loves BBQ sauce but hates spice.  If I try to sneak in even a little bit of spice into my BBQ sauce my kids will call me out on it right away. Guaranteed.  I've tried. So this time I decided to make my own BBQ sauce that has the sweetness and tanginess that makes BBQ so delicious, and the chicken so tender, but eliminate any hint of a kick.  Yep. No chili peppers.  Typically I love to add chipotle peppers in adobo sauce ... Continue Reading

Sweet and Spicy Grilled Pineapple

These sweet and spicy grilled pineapple skewers may be the easiest recipe I've ever posted.  But easy doesn't mean it's doesn't bring the wow factor with the flavor.  I made a super fast glaze for the pineapple by combining honey, Sriracha sauce, and soy sauce.  That's it!  Brush some one before you grill it, a little more while grilling, and the last little bit after.  The honey gives it that sticky sweetness you want and the Sriracha adds a little heat.  The soy sauce brings the balance ... Super Bowl Bites – Pancetta Wrapped Shrimp, Paprika & Pepper Jack Cheese Dip, and Candied Pecan Crostini with Gorgonzola & Honey

Looking to wow your guests with a super bowl menu that is both delicious and a little bit sophisticated?  This one has it all.  It’s perfect for a gathering of both sexes – a little something for everyone.  If you are having a larger crowd you can certainly double or triple the recipe to meet your needs.  And if you want something more substantial to round out the menu I’d recommend a slider bar.  Mini burgers served on slider buns or brioche rolls and then an array of fixins’ so ... Greek Chicken Pitas with Fried Onion Rings

If you haven't tried marinating meat in Greek yogurt, you must.  It's similar to the idea of marinating in buttermilk.  The yogurt is tangy and thick and gives a coating to your chicken that tenderizes it and keeps it extremely moist during the cooking process.  By adding in a lot of spices like cumin, oregano, onion, a little paprika and lots of garlic you get this really wonderful, flavorful chicken that will surprise you.I happen to love a good Gyro but ...
