Shrimp Nachos

Warning! Highly addictive Shrimp Nacho recipe below.  If you have any shrimp lovers coming over on game day this is nacho recipe is a must have.  Best of all, you can make the salsa, bean and corn mixture and even the shrimp ahead of time and then just assemble and bake when the game comes on!  Touchdown on the prep. I secretly love football junk food.  It's a fact.  There is something so comforting about some chicken wings and nachos and a good old seven layer bean dip.  Nostalgia?  ... Continue Reading

The Perfect Meatball

Oh yeah.  I said it.  It's a bold move to call this the perfect meatball but I really think I may have a winner.  Take it from the girl who has made countless meatballs over the years and tried every kind of technique and recipe out there.  This recipe is culmination of my years of learning and refining.  And the best part?  It's a pretty straightforward, basic recipe.  No gimmics.  But trust me....this ain't your mamma's meatball.  It is crunchy on the outside and oh-so-tender on the ... Spanikopita Bites

Spanikopita bites. Flaky, delicate crunchy bites of phyllo pastry stuffed with loads of spinach and creamy feta cheese.  That's the Spanikopita we all dream about biting into, right?  The traditional Spanikopita is made with phyllo dough that is buttered and layered then stuffed with a spinach and onion mixture and Greek feta cheese then topped with more buttery phyllo. It usually is assembled in the shape of a pie or in a large 9 x 13 in baking dish and then baked and cut into large squares ... Continue Reading

Fresh Corn Soup

Fresh shucked Corn Soup.  Corn cut straight from the cob and sautéed lightly with some onion and shallot and a little bit of garlic.  Simple.  Seasonal.  So delicious.  I love to add the finishing touches at the end with a bit of crunchy pancetta and chopped jalapeno.  But you could add fresh crab and a dash of hot sauce instead.  Or just a little bit of fresh corn.  Or....just lemon juice.  It's all up to you.  Kind of like a taco bar.  Just put this out with a few fixins and ... Balsamic Rosemary Chicken Skewers and Cipollini Onions

Balsamic Rosemary Chicken Skewers and Cipollini Onions....is there anything better than that?  Balsamic acts as a tenderizer so you get this really tender, flavorful chicken that turns a nice golden brown color on the grill or in the skillet.  My kids actually LOVE this recipe for chicken.  I added the Cipollini onions because they are small and could be easily skewered to make a really cute presentation of chicken and onions.  Same with the lemon slices.  Your guests can remove the lemon ... Part of my Father's Day menu is this mouth watering and super simple Brown Sugar and Bourbon Glazed Bacon.  It contains all the necessary elements (sweet, salty and little back-of-the-mouth tang from the Bourbon).  And it's the perfect accompaniment for any brunch but particularly a Father's Day brunch that features all things bourbon, bacon and beer.  I bet you know a dad out there who will love this amped up version of bacon!  And if you aren't sure of the bourbon part (or if you want to ... Bacon Caprese Cups

Father's Day is coming up and in honor of all the bacon loving dads out there I wanted to create a menu that includes bacon and/or beer in every dish.  I'm starting out with these Bacon Caprese Cups and we'll see where it goes from there!  Caprese Salad is so delicious and simple.  It celebrates the beauty of a perfectly ripe, sun-kissed tomato with just a few simple ingredients like creamy mozzarella cheese, fresh basil, olive oil and salt.  While this version might make a purist cringe ... Cinco De Mayo Salsa

Fresh salsa.  Simple but irresistible. This Cinco De Mayo inspired salsa is easy, fresh, and delicious.  Served alongside some guacamole, chips, and a refreshing, ice-cold margarita you have yourself the perfect starter for any Cinco De Mayo celebration.  Store bought salsa is fine but why not blend up a quick batch of your own?  It only takes a few minutes and a couple of ingredients that you may already have on hand.  And if there are any leftovers....not that there will be... I love ... Sweet and Spicy Chicken

Nothing could be easier than this three ingredient sweet and spicy chicken.  It's honey, Sriracha, and oranges.  I like to use clementines this time of year (in the Mandarin family) but really you can use any kind you can find. The great thing about this recipe is you can feed a crowd or cut it up and put it on skewers as a fancy appetizer.  Either way it's a winner.  The key is to marinade for at least a couple of hours but that's the hardest part about it.  Other than that it's a cinch ...
